Bean and Quinoa Soup

     Well the blizzard has come and gone but unfortunately we are not going anywhere any time soon!  We have slowly been chiseling away at the nearly three feet of snow in our driveway, yet we haven't seen (or heard) a plow anywhere nearby.  I'm not sure what I will do stuck in the house another day.  I have already steamed and pureed anything I could find to make into baby food.  We made a homemade pizza for dinner.  All the laundry is done and the house is clean.  We have had some pretty intense family dance parties.  Some of you may end up with some pretty fancy Valentine cards if I get desperate. Oh yeah...I also made soup!

Bean and Quinoa Soup

 Ingredients
1 tbsp olive oil
2 cloves of garlic, minced
3/4 cup carrots, chopped
1 cup dry quinoa
4 cups vegetable broth
4 cups water
1 can black beans
1 can cannellini beans
1 can diced tomatoes
2 bay leaves
8 oz fresh baby spinach

Method
1. Heat oil in a large pot over medium heat.  Add garlic and carrots.  Cook until the garlic is cooked.
2.  Add the quinoa and cook for 1 minute.
3. Add the rest of the ingredients, except the spinach.
4. Cover and simmer for 2 hours.
5. Stir in the spinach and let cook until the spinach wilts.
6. Serve with chopped tomatoes and tortilla chips.
